Pumpkin spice chocolate chip oatmeal cookies with a homemade cinnamon vanilla cool whip. Say that three times fast :)
They are so good, especially with the cool whip on top.
I made The Natural Mother’s Pumpkin Cranberry Oatmeal Cookies, but used gluten-free flour instead of the whole wheat pastry flour and chocolate chips instead of the cranberries. Also, I have a pumpkin spice mixture that I bought, which made the recipe easier.
I also made Chocolate Covered Katie’s Vegan Cool Whip, which if you have never had anything vegan, may sound gross, but trust me, it’s not. I used Thai Kitchen Organic Whole Coconut Milk. I added to it a teaspoon of Amish cinnamon, a dash of vanilla, and some organic powdered sugar to taste (you can also use white sugar if you want). It turned out thick and creamy.
