Peach Cobbler – Gluten and Dairy Free

This cobbler is delicious. My hubby doesn’t typically like gluten and dairy free desserts, but he is a fan of this one.


Ingredients For Filling:
~2 3/4 cups (20 oz) peaches (can use more or less depending on desired amount you would like to make)
1/2 cup brown sugar
dash of cinnamon

Ingredients For Topping:
3/4 cup all-purpose gluten free flour
1/2 cup buckwheat flour (or garfava, quinoa, almond, etc)
1/4 cup sugar
3/4 cup dairy free margarine or butter
dash of salt
1 tablespoon cold water
1/8 or 1/4 cup brown sugar
dash of cinnamon

Making It:
For the topping –
Mix flours, regular sugar, margarine, and salt. Then put into fridge for 30 minutes.
Mix all of the ingredients together for the filling.
Preheat the oven to 375 degrees.
After 30 minutes, take out the dough/topping and mix in 1 tablespoon cold water.
Put filling into an oven safe container. I used 2 1/2 qt one.
Spread dough/topping over the filling so that the entire thing is covered.
Sprinkle brown sugar and cinnamon on top of the dough. This will make for a nice crispy top.
Bake for about 35 minutes (depends on your oven).

You can use just about any fruit you want with this recipe. Yum!
