{gluten/dairy/soy/corn/potato/tomato/egg free, with a vegan option}
Garlic and green beans are two of my favorite foods, so I try to play off of them a lot with my recipes. This dish I made is so pretty to look at, tastes great, and is super flexible as far as substitutes go. If you don't like bacon or don't eat meat, mushrooms or tofu (although this is soy) would be a really good substitute. If you do like meat, but don't want bacon, try sausage.
Ingredients:
1 red pepper
1 onion
8 strips of bacon (or substitute mushrooms, tofu, sausage, etc)
6 cloves of garlic (more or less, depending on how garlicky you want it)
16 oz (or 1 lb) green beans (whole or cut)
Making It:
- Cook bacon in a pan on the stove. Remove and chop.
- Chop garlic, onion, and red pepper.
- In the same pan (so that some flavor remnants remain) add garlic, onion, and red pepper. Saute.
- Add green beans. Cook until soft and heated through.
- Add bacon and stir.
- Sprinkle with olive oil.
