Loaded Mashed Cauliflower
{gluten/soy/corn/potato/tomato/egg/coconut free, with dairy-free options}

You may be starting to plan your Thanksgiving dinner. Instead of mashed potatoes this year, try this mashed cauliflower recipe. It’s delicious, easy to make, and your guests will be wowed with your innovation. This recipe doesn’t just have to be for Thanksgiving dinner, though, you can eat it as a side dish or main dish any time of the year!

Ingredients:
1 large head of cauliflower
12 oz of cooked bacon – chopped (will equal about 1.5 cups when chopped)
6 oz sour cream (About 3/4 cup. You can also use yogurt of choice.)
1/4 cup milk of choice (Add more if needed.)
1/8 cup chopped green onions
1/4 cup cheddar cheese (Unpasteurized or rice shreds for lactose-free, Daiya or cashew cream for dairy-free.)
1-2 oz goat cheese (Optional, but add more sour cream or yogurt if you don’t use it.)
Seasoning of choice (I used garlic, onion, ground mustard, and black pepper.)

Making It:

  1. Cut up your cauliflower.
  2. Cook the cauliflower in a large pot with a little bit of water until a fork can easily go through the stems. Drain it once it’s cooked through.
  3. Put the cauliflower back in the pot, then add milk, sour cream, and goat cheese.
  4. Mash with a potato masher if you would like to keep it chunky (Think mashed potatoes that have visible chunks of potato in it, except this would be with cauliflower.). Or, you can transfer the cauliflower mixture to a food processor or blender to process until smooth.
  5. Mix in bacon, green onion, and cheddar cheese.
