Raw Almond Butter Chocolate Chip Cookie Dough Balls
{gluten/dairy/soy/corn/tomato/potato/egg/coconut/refined-sugar free}

I’ve seen many recipes online for both cooked and raw cookie dough balls, but none of them were quite what I wanted. Don’t get me wrong, they all sounded delicious, but not really what I was wanting to eat at the time. My recipe has been inspired by Real Sustenance’s Raw Honey-Almond Butter Truffles. They are Paleo, grain-free, refined-sugar free, and can be made vegan if desired.

Ingredients:
1 cup almond flour
1/2 cup almond butter
1/4 cup chocolate chips
1/4 cup + 2 tablespoons honey, agave, or another thick liquid sweetener
2 tablespoons ground flaxseed (or ground chia seed)
2 tablespoons cocoa powder

Making It:

  1. Combine all ingredients EXCEPT for the cocoa powder.
  2. Roll into balls. This recipe will make about 24 of them.
  3. Roll the balls in the cocoa powder to coat each one.
  4. Place on parchment paper and put into the freezer. You can eat them directly from the freezer or let it sit out for about 2 minutes before eating (much longer and they will melt).

You may be able to put them in the fridge, but I can’t vouch for the consistency because I didn’t try them that way.
