Flourless Raw Almond Pecan Cookie Dough Balls Recipe

I’m a sucker for cookies, raw cookie dough, and anything similar. I had some pecans on hand from Vitacost, and wanted to make something with them, so I searched online to see if I could find an appealing cookie dough recipe that incorporated pecans. I came across two recipes at Chocolate Covered Katie – Peanut Butter Cookie Dough Cookies and Chocolate Chip Peanut Butter Balls – but I’m allergic to many of the ingredients in both of the recipes, plus neither recipe contained pecans. They both sounded really good, though, so I decided to use them as my inspiration to come up with my own recipe.

My cookie dough balls could probably be baked, but I didn’t try it, so I’m not totally sure how they would turn out. As cookie dough balls they make a great breakfast, snack, or dessert. I say breakfast or snack because they are packed with great nutrients and don’t have much by way of a sweetener in them (they aren’t salty, though, so I still consider them a dessert).

Flourless Raw Almond Pecan Cookie Dough Balls Recipe

Makes about 15.

 

Ingredients:

½ cup raw pecan halves — unsalted

¼ cup ground flaxseed

½ cup + 2 tablespoons unsalted almond butter

1 teaspoon alcohol-free vanilla extract

3 tablespoons honey, maple syrup, or apple “honey” (I used homemade apple “honey”, which isn’t actually honey, but the consistency of honey. Using it makes this recipe sugar free, except for the sugars naturally occurring in apples.)

½ teaspoon cinnamon

 

Making It:

  1. Mix everything in a food processor until smooth.
  2. Form into cookie dough balls.
  3. Eat right away or store in the fridge.

Usually once every month or two I place an order with Vitacost because they offer so many products that I can’t find locally, plus I love their free shipping over $49. They don’t taste super oily like many of the other nut brands that I’ve tried. Plus, they don’t contain soy or wheat, which I’ve found to be a common “extra” ingredient in store bought nuts.
