Taco Bake Casserole
I was recently challenged to create a simple recipe for healthy eating. You all know that I’m big on healthy eating, so this was right up my alley. I hadn’t shopped at Food Lion since college, so I was excited to head to the local store to check out their new private label brand called my essentials. I was pleasantly surprised to find , not only how cost-effective the brand is, but also how many healthy options they have – including frozen veggies, rice, and salsa – all being free of preservatives and artificial ingredients!
In my recipe the broccoli, brown rice, salsa, and cheddar cheese are all my essentials brand. The recipe turned out AMAZING.
Side note about keeping the rice moist – I personally think bacon that’s free of preservatives and other junk is a healthy fat. To keep my rice moist I poured the excess bacon drippings over the casserole before putting it in the oven. So good!
2 cups uncooked (4 cups cooked) brown rice
8 slices of cooked bacon, chopped
1lb ground meat – I used pork
16oz (1lb) broccoli
paprika to taste
cumin to taste
cayenne to taste
garlic powder to taste
Optional Mix Ins – black beans, red or green peppers, cheese
Optional Toppings – salsa, sour cream, cheese
- Cook rice.
- Preheat oven to 375 degrees.
- Cook ground meat.
- Mix all ingredients together in a 9×13 casserole dish.
- Bake for about 30 minutes, or until the broccoli is cooked through.
- Top with salsa and sour cream.
