Pasta With Sausage In A Spinach Pesto Sauce
We typically eat grain-free, but occasionally will add in some rice since I’m limited on what foods I can eat. With my Food Blogger’s Challenge being spinach this week, I thought I would share my spinach pesto sauce recipe. I love it so much more than a pesto sauce with basil. My pesto sauce doesn’t have dairy or tree nuts, so it’s pretty safe for everyone!
3 sausages – any flavor you want
Ingredients For Pesto Sauce:
3 cups fresh spinach
1/2 cup olive oil
1 clove of garlic
- Boil pasta.
- Slice sausage into thin pieces and cook until heated through. I followed my homemade pepperoni recipe directions for cooking my sausage, but only left the pieces in the oven for half the amount of time as that recipe calls for.
- Put the spinach, olive oil, and garlic into a food processor and process until smooth.
- Once pasta is done cooking, drain it, then add it back to the pot.
- Add pesto and sausage. Stir to combine.
