Sliced Turkey Breast With A Dairy-Free Bacon Spinach Pesto Sauce Recipe

All of my chicken trials over the past year have failed miserably. Even though I don’t think I’m allergic to the chicken itself, I think I’m reacting because of what they are fed. I recently found a local vender that sells turkey. I react to their ground turkey (maybe cross contamination with what they clean their grinding machine with), but their turkey breast is safe. And, I was delighted to find out that, if cooked properly, it tastes just like chicken. Yay!

I saw a recipe on Pinterest for Bacon Kale Pesto, and thought it sounded great. I haven’t quite ventured into the world of kale yet, and I am allergic to some ingredients in her recipe, so I decided to come up with my own. It pairs great with turkey breast, but would also work with beef, lamb, and seafood. I am absolutely loving this recipe. I took my basic spinach pesto recipe, and added a ton more flavor.

Sliced Turkey Breast With A Dairy-Free Bacon Spinach Pesto Sauce Recipe

 

Ingredients:

1lb turkey breast – This was 4 pieces for me.

4 slices of cooked bacon

½ cup melted bacon fat – Olive oil, melted coconut oil, melted ghee, or melted butter would also work, but the sauce wouldn’t taste nearly as good.

3 cups of fresh spinach

⅛ cup sliced almonds – leave out if you can’t have tree nuts

½ clove of garlic

¼ cup ghee {coconut oil or butter would work too}

1 tablespoon fresh rosemary

 

Making It:

  1. Preheat oven to 375 degrees.
  2. Slice turkey breast, place in a baking dish, and cover with 1/4 cup ghee and rosemary.
  3. While the turkey is baking, place the rest of the ingredients in a food processor and process until smooth. If you can’t fit it all in, put some of the spinach in and process it a little. Then add the rest of the ingredients.
  4. Bake the turkey for about 20 minutes, then top with the pesto sauce.
  5. Bake for about 5 more minutes.
