Dark chocolate is, by far, my favorite kind of chocolate to eat, so of course I jumped at the chance to try out Enjoy Life’s Dark Chocolate Morsels. They’re 69% cacao and the only two ingredients are unsweetened chocolate and cane sugar. It’s nice not to see a long list of unpronounceable or GMO ingredients. And it’s especially nice that they don’t contain dairy or soy like most chocolate products do. The morsels are pretty big; just the right size for snacking on ;)

Enjoy Life Dark Chocolate Morsels

In the past I’ve made chocolate chip cookie bars, chocolate chip cookie cupcakes, chocolate chip cookie dough frosting, and chocolate chip cookie dough frozen yogurt (to name a few), so the next logical recipe for me to make had to be fudge! I have fond memories of eating delicious fudge growing up, so I set the bar high for my homemade version, and it did not disappoint! Enjoy Life’s Dark Chocolate Morsels were perfect in this recipe – they had just the right amount of sweetness and were just the right size for the fudge.

Paleo Chocolate Chip Cookie Dough Fudge Recipe

 

Ingredients:

2 cups almond flour

1 cup organic palm shortening

½ cup honey

2 tablespoons vanilla extract

¼ teaspoon sea salt

½ cup + 2 tablespoons Enjoy Life Dark Chocolate Morsels

 

Making It:

  1. Mix all of the ingredients together, except for the 2 tablespoons of chocolate chips.
  2. Pour into an 8×8 dish.
  3. Sprinkle the 2 tablespoons of chocolate chips on top.
  4. Cover and put into the freezer for about 2 hours, or until it’s set.
  5. Store in the fridge or freezer.
