Crock-Pot Orange Balsamic Pot Roast
One of my new food obsessions is chuck roast. It’s ridiculously easy to make in the crock-pot. I just toss in the roast along with any flavors that I want, and a few hours later I’ve got a tasty dinner for my family.
Adapted from Add A Pinch’s Balsamic Roast Beef. I paleo-fied her recipe and added my own flavor twist to it.
2 lbs beef chuck roast
1 onion, chopped
juice of 1 medium orange (about ¼ cup of juice)
2 tablespoons honey
¼ cup balsamic vinegar
2 tablespoon ground flaxseed
2 cloves of garlic, pressed
½ tablespoon black pepper
1 tablespoon mustard powder
- Put the beef and onion in the crock-pot.
- Whisk the orange juice, honey, balsamic vinegar, ground flaxseed, garlic, black pepper, and mustard powder together in a bowl.
- Pour the liquid mixture over the beef.
- Cook on low for about 3 hours.
- Slice and serve.
