Paleo Fried Rice Recipe – made without soy or coconut
Fried Rice was always one of my favorite dishes. When I found out I was allergic to both soy and coconut, it became a difficult meal to make. Recently I came up with this stir-fry recipe that’s free of those ingredients, yet tastes pretty similar to the fried rice I miss eating.
4 cups cooked (2 cups uncooked) white rice or 1 head of cauliflower “riced”
1 lb ground pork
¼ of a head of cabbage, chopped
1 onion, chopped
1 lb broccoli, chopped
3 cloves of garlic, finely chopped
1 teaspoon ginger
1 teaspoon sea salt
½ cup balsamic vinegar
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
olive or coconut oil
- Put the onion and garlic in a pan on the stove with the olive/coconut oil. Cook until the onion is translucent.
- Add the ground pork and brown.
- Add the rest of the ingredients (except the rice). Feel free to move it all to a large pot so that you have enough room. Cook until the broccoli and cabbage are soft.
- Add the rice and stir until well combined.
