Paleo Fried Rice Recipe - made without soy or coconut

Fried Rice was always one of my favorite dishes. When I found out I was allergic to both soy and coconut, it became a difficult meal to make. Recently I came up with this stir-fry recipe that’s free of those ingredients, yet tastes pretty similar to the fried rice I miss eating.

Paleo Fried Rice Recipe - made without soy or coconut

 

Ingredients:
4 cups cooked (2 cups uncooked) white rice or 1 head of cauliflower “riced”
1 lb ground pork
¼ of a head of cabbage, chopped
1 onion, chopped
1 lb broccoli, chopped
3 cloves of garlic, finely chopped
1 teaspoon ginger
1 teaspoon sea salt
½ cup balsamic vinegar
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon sesame oil
olive or coconut oil

Making It:

  1. Put the onion and garlic in a pan on the stove with the olive/coconut oil. Cook until the onion is translucent.
  2. Add the ground pork and brown.
  3. Add the rest of the ingredients (except the rice). Feel free to move it all to a large pot so that you have enough room. Cook until the broccoli and cabbage are soft.
  4. Add the rice and stir until well combined.
