One of the things I crave a lot is peanut butter and jelly, but with all of my allergies, including my newly discovered peanut sensitivity, that’s really not an option for me. Today was a hot day, so I decided to try something fun: An Almond Butter And Jelly Ice Cream {or smoothie, as I have provided directions on how to make both}. Not quite a PB&J sammy, but it still tasted pretty good.

Sugar-Free And Dairy-Free Almond Butter And Jelly Ice Cream OR Smoothie

Ingredients:
2 tablespoons almond butter
2 cups (or 10 oz) frozen strawberries
1 cup almond milk — increase to 1 1/4 or 1 1/2 cups if making a smoothie, depending on how “liquidy” you like smoothies
1 teaspoon alcohol-free vanilla extract
pinch of cinnamon
optional – sweetener of choice
optional – chocolate chips, shredded coconut, almond slivers, or other fun mix-ins

Making It:

  1. Put all of the ingredients into a blender, and blend until smooth. 
  2. Serve and enjoy!

Dairy-Free Banana Split Ice Cream

We are getting back into warmer seasons, and what better way to celebrate incoming warm weather than with ice cream! I’d never heard of banana split ice cream before, so I decided to be creative and try something new. The best part? You don’t need an ice cream maker, just a blender or food processor!

Dairy-Free Banana Split Ice Cream

This recipe serves two. I’ve calculated two bananas per person.

Ingredients:
4 frozen bananas, cut into small chunks – make sure you cut the bananas up before freezing them
1/2 cup defrosted (previously frozen) strawberries, so that you have the liquid with the strawberries
1/2 cup MimicCreme, unsweetened (or heavy cream or milk of choice)
1 teaspoon alcohol free vanilla
1/4 cup honey or maple syrup
2 tablespoons cocoa powder
nuts – optional
cherries or other fruit – optional

Making It:

  1. In a small bowl mix the liquid sweetener and cocoa powder until well combined. Feel free to heat up the liquid slightly if it’s not mixing well. Set aside.
  2. In a blender put the bananas, strawberries, MimicCreme (or milk of choice), and vanilla. Blend until smooth and it looks like ice cream.
  3. Spoon into bowls, and top with your homemade chocolate syrup and whatever other optional ingredients you would like.

If you don’t want to eat it right away, or if you have left-overs, you can freeze it and then take it out of the freezer about 30 minutes before you want to eat it.
