Recipe: Pork Stuffed Apples

Pork Stuffed Apples
{gluten/dairy/soy/corn/tomato/potato/egg/coconut free}

I’ve seen several different stuffed apple recipes around Pinterest, but none of them really fit my allergies, so I decided to come up with one. My recipe is both sweet and savory. It is easy to make, filling, and pretty tasty.

Ingredients:
4 apples
1lb ground pork
1 flax egg
1 teaspoon thyme
1 tablespoon onion powder
1/2 teaspoon black pepper
1/2 tablespoon cinnamon + more for sprinkling

Making It:

  1. Cut each apple horizontally, then cut out the seeds and stem pieces. Also cut out some of the excess apple on the inside, so that it’s not so thick. This will leave you with eight apple bowls. Put the bowls inside of a baking dish.
  2. Mix the raw ground pork, excess apple pieces, flax egg, and seasonings.
  3. Fill each apple with the pork mixture, then sprinkle on some cinnamon.
  4. Bake at 350 degrees until apples are softened and the pork is cooked, about 30 minutes.
