Grain-Free Pizza Muffins

These isn’t your typical pizza. My pizza is in muffin form and doesn’t contain grains, dairy, or tomato. So how can I call it pizza without those 3 main ingredients? Simple, because they actually taste like pizza!

Grain-Free Pizza Muffins

Makes 12 large muffins.



4 cups almond flour

4 tablespoons ground flaxseed+ 12 tablespoons water (or 4 eggs)

¼ cup arrowroot flour (or coconut flour)

½ cup melted ghee (or coconut oil)

1 tablespoon garlic powder

1 tablespoon parsley

1 tablespoon oregano

4 links of italian sausage, finely chopped or ground in a food processor

8 slices of cooked bacon, finely chopped or ground in a food processor

½ cup spinach, finely chopped or ground in a food processor


Making It:

  1. Preheat the oven to 375 degrees.
  2. Mix together the flaxseed and water and let it sit for a minute.
  3. Mix all of the ingredients together, then scoop into the muffin tin. I used silicone muffin cups as liners. Fill each tin all the way to the top.
  4. Bake for about 30-45 minutes, or until firm.
  5. If you would like to use cheese, you can mix in about 1 cup with your batter before baking or melt some on top of the cooked muffins. Dip them in your favorite sauce and enjoy.

  1. Wow, arrowroot flour? I have to try this as I’ve been hunting down healthier yet yummy alternatives and think the kids would like this one!

    • I like to use arrowroot as a binding agent since I can’t eat eggs. I wouldn’t recommend it for every day use as some people’s bodies may not agree with it, but it works well in recipes like this.

    Just made these. Not sure how they got to 4 eggs or 12 teaspoons of water. It wouldn’t mix at all . I needed 4 eggs and a cup and a half of water.

    • I had no problems mixing it when I made it. It’s supposed to be a very thick batter. Did you use the almond flour, or did you sub something for it? Also, did you remember to include the melted ghee?

There are so many recipes I skip because I am not sure what to use instead of something our family won’t put in our body’s. This is one of the best recipes I have ever come across because of all the alternatives. THANK YOU

    Italian sausage comes in various weights. Do you have an estimate of how much the 4 links weighed before cooking? The same for the bacon as well. Thanks for your help.

    • I honestly have no idea. You can use however much you want, depending on your preference. The sausage was Applegate brand and the bacon was 365 brand. Based on pictures I’m pulling up online, it looks like the sausage package I used is 12oz total for all 4. The bacon, I really couldn’t say. But the deviation from package to package is so minimal, that it won’t make a difference.
