Garlic Lime Pulled Pork Un-Casserole
Pulled Pork is so good. What makes it even better is that you can cook it in a crock-pot. Super easy! I call this dish an un-casserole because it has everything you would expect to find in a casserole, except I layered each ingredient in individual bowls instead of baking it all together.
2 lbs boneless pork shoulder/pork butt
2 cups cooked white rice – This ended up being 1 cup uncooked rice.
1 lb chopped broccoli
3 cloves of garlic
½ of a lime
1 tablespoon paprika
1 tablespoon cumin
1 tablespoon oregano
- Rub the pork with the paprika, cumin, and oregano on all sides. Then, cook it with the garlic cloves and lime juice in a crock-pot on low heat for about 6 hours, or until the pork pretty much falls apart with the touch of a fork.
- When the pork is almost done, put the broccoli on a baking sheet, and bake at 375 degrees for about 30 minutes. Feel free to then broil it for a few minutes if you want them brown and crispy.
- In each bowl put a layer of rice, a layer of broccoli, then a layer of the pulled pork.
- Top each one with the juices from the bottom of the crock-pot.
