My hubby, son, and I travel a lot. We have family scattered all over the east coast, so we’re frequently driving to see them. Also, instead of taking one big vacation every year or two, we typically take one or two mini road trip vacations per year. Some of our favorite spots have been Virginia Beach and Pigeon Forge.

A few weeks ago we traveled up to New Jersey to see my mom and grandma. My brother and sister were also there visiting at the same time as us, so we were able to spend a good amount of time with them. Although it was really cold while we were there (0 degrees), it was still a great winter road trip because we were able to spend some quality time with family.

One thing that’s difficult for me on road trips is food because of my son and my allergies. Over the past year I’ve been able to get a pretty decent system down to cover both meals and snacks. I got a dehydrator for Christmas, so my new favorite snack to bring in the car with us is dehydrated zucchini chips. They’re really easy to make, mess-free, and taste delicious! Dip them in some goat cheese to make them more filling!

Ingredients:

4 zucchini

2 tablespoons olive oil

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon ground mustard

½ teaspoon sea salt

Making It:

  1. Slice the zucchini into even “chips”.
  2. Put all of the ingredients for the chips into a large bowl and stir with your hands to fully coat the zucchini.
  3. Spread out the zucchini on dehydrator trays, turn the dehydrator – I have a Nesco
    – onto 135 degrees (or according to your particular products setting), and dehydrate for about 5 hours (could be longer if your zucchini slices are thicker).
